Go Bananas


Jackson is onto solid foods now. He is a really good eater, but then again he always had been hence the big cheeks. He has tried all kinds of food now:
rice cereal
peas
carrots
sweet potatoes
applesauce (his least favorite)
avocado
bananas (his favorite)

The other day we were making baby food (big batches and then you put them in ice cube trays and freeze them for future use, great idea!). We also made banana bread and when I was making it I think Jack got a little frustrated because I kept putting the bananas in a bowl and not in his mouth. He kept smacking his lips and sticking out his tongue which is his way of saying "I'm hungry mom". So I decided to give him a bit and he was happy. Anyways, I thought you all might enjoy the pictures of us making the banana bread and the recipe.

PS. Jack got his second tooth, so now he has two front bottom teeth. No more gums only smiles.

Banana Bread
2 1/2 cups flour
1 cup sugar
1/2 cup butter
3-4 bananas
2 eggs
1 tsp vanilla
1 1/2 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp allspice
1/2 tsp nutmeg
1/2 tsp cloves
1/2 tsp salt
1 cup chopped nuts (optional)

Mix butter and sugar in large bowl until fluffy. Add two bananas and mix until smooched. Add eggs and vanilla and mix until combine. Combine remaining ingredients (except bananas) in a small bowl and slowly add to sugar mixture. Add remaining bananas and smooch but leave larger chunks. Add chopped nuts. Place in muffin tins, mini muffin tins, or loaf pans and cook at 375 degrees for 25-50 minutes depending on the type of bread you are making. Here is an estimate of the times for each:
mini muffins: 25 min
muffins and small loaves: 30-40
large loaves: 40-50

Bread will be brown on top and a toothpick inserted will come out clean. Enjoy.

Jess that is your little boy for sure. He loves to be in the kitchen. How cute that he is helping you make banana bread. He is lucky to have such a talented cook as a monther. He looks so cute in his bumbo. Saydee is learning to like hers.
